The etymology of the Gyuto originates in the Meiji Era of Japan (1868-1912). It literally means Cow Sword in Japanese. It is a relatively modern design of knife, appearing during the first waves of foreign trade in Japan. Western culture introduced significantly more red meat into the Japanese diet. This design is part Japanese heritage, part Western style chef’s knife. The Gyuto was developed by samurai sword-smiths in Sakai, a port city of Osaka. During late Meji period samurai were banned from openly carrying swords. Canny sword-smiths diversified into the design and manufacture of high quality culinary knives.
